Gluten Free Sage & Parmesan Butternut Squash Mash

This mash is one of my favorites! It tastes delicious and goes wonderful as a side with steak, chicken and fish meals.

It’s also healthier than potato mash! 1 cup of butternut squash gives you a great amount of the vitamins you need for the day: vitamin A (437%) , vitamin C (52%). Plus around 10% of vitamin B6, vitamin E, vitamin B5, thiamin & niacin, folate, manganese and magnesium. It’s also an great source of potassium!

Here’s the recipe hope you enjoy it!


  • 3 cups of Butternut Squash cut in squares
  • 2 tablespoons of butter
  • 1 cup of Parmesan Cheese
  • 2 teaspoons of brown sugar
  • 3 leaves of fresh sage
  • Pinch of nutmeg

Cooking Instructions

1 – Cut butternut squash into squares

2- Add squash into microwave safe bowl and cover with plastic wrap. Cook in microwave for 10 minutes or until soft.

3-While it’s cooking, prepare the rest of ingredients: 4 tablespoons of butter, 2 teaspoons of brown sugar, pinch of nutmeg and 1 cup of grated Parmesan cheese

4-Carefully remove plastic wrap without burning (there’s a lot of hot vapor that will come out) and drain excess of liquid from squash

5-Add butter into a small bowl with fresh sage leaves roughly chopped and microwave until melted

6-Add to squash the rest of ingredients: melted butter & sage, brown sugar, nutmeg and Parmesan cheese. Process until mash.
