This is the very first recipe I share on my blog, so I’m having a very exciting day!
I love cooking and I absolutely love pizza! Cauliflower pizza is my favorite and because in my world cheese calories don’t count (yes, I am a cheese nutty) this pizza always gives me a big ass happy smile.
I’ve tried multiple versions of cauliflower pizza. Yesterday I decided why not roasting the cauliflower with some garlic and give it that extra flavor! And It worked like a charm…
So let’s let the cat out of the bag. Here’s my (now favorite) gluten free roasted cauliflower pizza. Enjoy!
- 1 Cauliflower head
- 1/4 Cup of olive oil
- 6 Minced garlic cloves
- 2 Tsp. of dried spices: oregano, thyme & basil
- 1 Cup of aged Parmesan cheese (separate 1/2 cup for the crust)
- 1 Cup of Cheddar cheese (separate 1/2 cup for the crust)
- 1 Cup of chopped smoked ham
- 2 Cups of sliced white mushrooms
- 1 Cup of chopped green onions
- 1 Egg slightly beaten
- Salt & Pepper
- 1 teaspoon of Truffle Oil
1 – Preheat the oven to 400 F
2 – Cut the cauliflower into small florets
3 – Add olive oil and spices and mix well, use your hands to get it well distributed.
4 – Put cauliflower on a baking sheet and into the oven for about 30 minutes (we want a nice crunchy cauliflower). If it’s not browned enough broil it for an extra couple of minutes.
5 – While it’s roasting, let’s get the ingredients ready…
- Grate 1 cup of Parmesan and 1 cup of Cheddar cheese.
- Chop 1 cup of ham into squares.
- Slice very thinly about 2 cups of mushrooms.
- Chop 1 cup of green onions
6 – When the roasted cauliflower is ready & crispy get it out of the oven. We want to squeeze excess of water (if there is any) so wrap it in a dish towel or paper towel and squeeze…
7 – Blend it until it’s a rice type consistency.
8 – Add the egg (slightly beaten), the cheese (remember that 1/2 is for the toppings) and give it a gourmet touch with a dash of truffle oil – it goes wonderful with cauliflower, I use it all the time when I make cauliflower mash or soup.
Mix well with your hands and season with salt & pepper.
9 – Prepare a baking pan, you can either put parchment paper or tin foil on top, I used the last one and sprayed it with cooking oil.
Press the cauliflower mix and distribute thinly into the baking pan.
10 – Bake for 20 minutes or until nice and golden.
11 – Add the toppings: I used a layer of mushrooms, a layer of ham, a layer of cheese and the green onions on top.
12 – Bake another 10 minutes & you are ready for a dreamy pizza!
